Oatmeal Pancakes


  • 35 grams old-fashion oats
  • 2 egg whites
  • 2 grams sugar free/fat free vanilla pudding mix
  • 1 teaspoon vanilla
  • 20 grams (approximately 1/2 scoop) protein powder
  • 8 grams raisins
  • Cinnamon (to taste)
  • 1-2 packets of stevia or splenda

In a large mixing bowl, combine all ingredients and mix thoroughly.  Spray skillet with non-stick cooking spray.  Pour batter onto hot skillet.  Flip and serve topped with fruit of choice.

Or you can roll the pancake like a crepe and fill with fruit of choice.
