Stuffed Sweet Potatoes


  • 1 Medium sweet potato
  • 3 oz Cooked chicken
  • Spinach, mushrooms, onion (or veggies of choice)
  • Sea salt and pepper, to taste
  • McCormick Grill Mates Brown Sugar Bourbon


Bake or grill chicken.  I seasoned my chicken with the McCormick Brown Sugar Bourbon. You can season to your taste.  Wash the sweet potato and poke with a fork.  Microwave for 5-6 minutes.  While the sweet potato is cooling, saute the spinach, chopped mushrooms and onion.  Season veggies with salt and pepper to taste.  Slice the sweet potato in half and scoop out the middle of the potato.  Chop up the scooped out potato, add chopped chicken and veggies and fill the remaining potato.  Enjoy!

*You can substitute any protein you prefer instead of chicken.  You can use pork, steak, venison etc.
