• 1 whole egg
  • 6-8 egg whites
  • Spinach, chopped
  • Mushrooms, chopped
  • 14 grams of 2% Monterey Jack and Cheddar Cheese
  • Sea salt, garlic powder and minced onion to taste

In small mixing bowl, combine all ingredients and mix thoroughly. Lightly spray 2 cup capacity baking dish with Pam.  Pour mixture in dish.  Bake at 375 degrees for about 40 minutes.

You can substitute any kind of vegetable you prefer … broccoli, peppers, onions etc.

You can purchase the baking dish pictured in a three pack and bake a few at once and have them prepared for the week.
