Oatmeal Carrot Mini Muffins

  • 40 grams Oatmeal (grounded in blender)
  • 100 grams Carrots, grated
  • 60 grams Applesauce, unsweetened
  • 1 Tbl Honey
  • 3 Egg whites
  • 1 tsp Vanilla extract
  • 2 tsp Cinnamon
  • 1 tsp Pumpkin pie spice
  • 1/4 tsp Baking powder

Directions
Preheat oven to 350 degrees. Lightly spray mini muffin pans.  Ground oatmeal in blender and grate carrots.  Add all ingredients in small bowl and mix well and use a cookie scooper to place in mini muffin tin.  Bake at 350 degrees for 13 minutes.  Enjoy!
