Lightly spray large skillet with canola oil, cook ground turkey until it starts to brown. Add in taco seasoning, diced onion, and green pepper. Cook 3-4 minutes or until the onion and pepper start to soften.
Stir in green chilis, tomatoes and cauliflower rice. Cook 5-7 minutes until most of the moisture has evaporated.
Sprinkle with 2% cheese and cover until melted.
Note: You can top with jalapeno peppers, avocado, cilantro or sour cream
