Prepare quinoa according to package. Use chicken broth for the water or add chicken bouillon to the water.
Stir together quinoa, lemon zest, and lemon juice (1/2 – whole lemon to your taste). Add roasted red peppers, dried cranberries, red onion and basil and toss to combine.
Note: to roast the red pepper, pre-heat oven to 400. Place pepper on baking sheet and cook for 20 minutes. Turn pepper over and cook for an additional 20 minutes.
