Frank’s Lentil Soup

Ingredients

  • 3/4 -1 cup cubed chicken breast (uncooked)
  • 48 oz Chicken broth
  • 1/2 Onion, chopped
  • 10 Baby carrots, sliced
  • 6 Cauliflower florets,  cut up in smaller pieces
  • 4 – 6 oz Spinach, fresh
  • 1 Bay leaf
  • 16 oz can Goya lentils, drained (or 8 oz from the bag)
  • 3/4 – 1 teaspoon Lemon pepper seasoning
  • 1/2 teaspoon Curry powder

Directions

Saute onion and add uncooked chicken.  Saute with onion until chicken is cooked.  Add chicken broth, cauliflower, and bay leaf.  Bring mixture to a boil.  Once at a boil, add lentils, spinach, lemon pepper seasoning and curry powder.   Simmer for about 20 minutes.  The longer it simmers …. the better it tastes.  Enjoy!
