Lightly spray a large skillet with olive oil and heat to medium-high heat. Add the onion and saute for 4-5 minutes. Remove the onion and place on a plate.
Add the steak and season with salt and pepper to taste. Saute for 5 minutes.
Add the cooked onion to the skillet along with peppers and cook for 2-3 minutes. Add the minced garlic and ginger and cook for 1 minute.
Whisk together the water, soy sauce and cornstarch and pour the sauce over the steak mixture. Cook for 2-3 minutes or until the sauce thickens.
Serve over rice if desired.
