Lightly spray skillet with olive oil or canola spray and heat over medium. Add onion and cook for about 2 minutes. Add the sun dried tomatoes and cook for additional 2 minutes.
Add broccoli florets, riced cauliflower, paprika, italian seasoning and cumin to the skillet. Stir regularly for about 10 minutes or until veggies are crisp tender.
Pour in the chicken broth and almond milk and mix well. Lower the heat and continue cooking for about 5 minutes.
Add your protein of choice and enjoy!
