Chicken Quesadillas


  • 2 La Banderita Fat Free Tortillas
  • 85 grams Chicken breast,cooked and cut into small pieces
  • Grilled onions, green peppers or other vegetable of choice
  • 2 Tablespoons salsa
  • 1/2 oz Shredded low-fat monterey jack & cheddar cheese

In mixing bowl, combine chicken, vegetables, salsa and cheese.  Lightly spray skillet with non-stick spray.  Place one tortilla in skillet.  Spread chicken mixture evenly over tortilla .  Cook over medium heat until tortilla is lightly browned.  Remove from skillet.  Place second tortilla in skillet and top with first tortilla.  Cook until tortilla is lightly browned and center is warm.  Remove from skillet and cut into quarters.
