“Cheese Danish” Pancakes

  • 40 grams Oatmeal (grounded in blender)
  • 56 grams (about 1/4 cup) Friendship 1% cottage cheese
  • 80 grams Banana, mashed
  • 50 grams (about 1/4 cup) Blueberries, chopped *
  • 23 grams (about 1/8 cup) Liquid egg whites
  • 30 ml Blue Diamond Almond milk (unsweetened vanilla)
  • 1 tsp Vanilla extract
  • 1 tsp Cinnamon
  • 1/8 tsp Baking powder

Lightly spray skillet. Ground oatmeal in blender.  Add mashed banana, chopped blueberries, and ground oatmeal in small bowl and mix together.  Add remaining ingredients and mix well. Spoon onto skillet and cook until lightly browned and flip to brown on the other side. Makes about 3 pancakes depending on size. You can puree extra blueberries for ‘syrup’ if you would like. Just add in the extra calories. Enjoy!
