Blueberry Honey Oatmeal Pancakes

  • 40 grams Oatmeal (grounded in blender)
  • 100 grams (about 3/4 cup) Blueberries, chopped
  • 3 Egg whites
  • 1/2 Tbl (10g) Honey
  • 1 tsp Vanilla extract
  • 1 tsp Cinnamon
  • 1/4 tsp Baking powder

Lightly spray skillet. Ground oatmeal in blender and chop blueberries. Add all ingredients in small bowl and mix well. Spoon onto skillet and cook until lightly browned and flip to brown on the other side. Makes 3-4 pancakes depending on size. You can puree extra blueberries for ‘syrup’ if you would like.  Just add in the extra calories. Enjoy!
