Ingredients
- Zucchini
- Onions, chopped
- Mushrooms, chopped
- Peppers, chopped
- Spinach, chopped
- Jenny-O turkey sausage, hot or sweet italian *
- Garlic, sea salt, black pepper
- Panko bread crumbs
Directions
Cut Zucchini in half and scoop out the middle and save to add to the filling. Place zucchini boats on a nonstick cooking sheet or cover one with foil and spray with nonstick spray.
Season boats with garlic, sea salt and pepper and bake at 350 degrees for about 10-15 min (while making your filling).
In a non-stick pan, cook Jenny-O turkey sausage without casing. Add the onions, peppers, mushrooms, spinach (or veggies of choice) and the inside of the zucchini. When veggies and sausage are cooked, remove from heat and fill each zucchini. Top with a little panko bread crumbs and bake until zucchini is at desired tenderness.
* Use one link of sausage for each whole zucchini.
