Lightly spray large skillet with cooking oil, add chicken and saute until just about done. Turn off heat and set aside.
In second skillet, lightly spray with cooking oil. Add onion and saute for 3-4 minutes. Add mushrooms and saute until softened. Add sun dried tomatoes and press garlic and saute for 2-3 minutes. Add diced tomatoes, oregano, thyme, salt and pepper.
Then add the vegetable mixture in with the chicken, cover and cook until chicken is cooked through, about 5-8 minutes. Enjoy!
