Ingredients:
- 2 zucchini, spiralized
- 1/2 cup matchstick carrots
- ½ onion, chopped
- 1 clove garlic, pressed
- Salt to taste
- 1 lb shrimp, peeled
- 1 clove garlic, pressed
- 6 oz spinach
- 1 Tablespoon lemon juice
- Paprika, salt, black pepper to taste
Directions:
Very lightly spray large skillet with cooking oil. Add spiralized zucchini, carrots, onion, garlic and salt and cook over medium heat for about 5 minutes. Remove from skillet.
Very lightly spray the skillet again. Add shrimp and garlic and cook for about 3-4 minutes until shrimp are just pink. Add spinach, lemon juice, paprika, salt and pepper until spinach wilts. Combine shrimp mixture with zucchini mixture. Enjoy!
