Ingredients
• Cooking spray • 1 medium red onion, thinly sliced • 1 clove garlic, pressed • Spinach • 1 teaspoon cider vinegar • ¾ teaspoon ground sage • ¼ teaspoon rosemary • ½ teaspoon sea salt • ½ teaspoon black pepper • 1/8 teaspoon ground nutmeg • 1 package lean ground turkey (93% or 99%) • 6 portobello mushroom caps, gills removed • ¾ cup cheese of your choice (mozzarella, swiss, fontina, bleu cheese)
Directions
Position oven rack to lower position and preheat to 400 degrees. Spray medium skillet with cooking spray, add garlic and onions and cook until soft. Add spinach and cook until wilted. Stir in cider vinegar.
While onion mixture is cooking, combine sage, rosemary, sea salt, black pepper, nutmeg and ground turkey. Mix well and form into 6 equal balls. Place one turkey ball on top of each mushroom and press down to fill cap.
Place on baking sheet and bake on the bottom rack until the mushrooms begin to soften , about 20 minutes. Remove from the oven and top each with the onion mixture and then cheese. Continue baking until the cheese is melted and turkey is cooked, about 5 minutes.
