Lightly spray large pot over medium high heat. Add onion, celery, carrots and Cajun seasoning. Cook and stir for about 3 minutes. Add pressed garlic and cook an additional minute.
Add the chicken broth and quinoa. Add salt and pepper to taste. Partially cover and bring to a simmer and then reduce heat to medium and cook about 10 minutes. Add the broccoli and cook uncovered about 4 – 5 minutes. Add the chicken and stir through.
