Preheat oven to 300. Lightly spray the bottom of an 8″ x 8″ or 9″ x 9″ baking dish.
Mix the graham cracker crumbs and melted butter in small bowl. Press into baking dish and bake for 8 minutes. Remove from oven and set aside.
In large bowl, beat cream cheese until smooth. Add Greek yogurt and mix to combine. Add eggs and egg yolk and mix. Finally add sugar, pineapple juice and vanilla and mix until everything is combined well and there are no lumps.
Pour cream cheese mixture over graham cracker crust and bake for 40-45 minutes or until the center no longer jiggles. Remove from oven and allow to cool for about an hour. Then refrigerate for at least 4 hours.
