Spray large skillet with canola oil, add red onion and saute for 2-3 minutes. Add white or portobello mushrooms (or a combination of both) to the skillet. Add garlic, sea salt, pepper and 1-2 pinches of rosemary. Saute for 3-4 minutes over medium high heat.
Reduce heat to medium low, add balsamic vinegar and soy sauce. Cook, stirring occasionally until the mushrooms are soft and liquid reduce and thickens, about 5-7 minutes.
