While the squash is baking in the oven, cook the ground turkey and onion in a large skillet until browned. Remove from heat and add salsa, spinach, red pepper, applesauce and seasoning. Mix well.
After the squash is cooked and the strands are scraped out of the squash, place in a 9 x 13″ baking dish. Add the turkey mixture on top of the squash.
Mix the egg and egg whites together and pour over turkey and squash mixture. Toss until combined.
Cook at 350 degrees for about 45-55 minutes or until eggs are set.
* You can also change the protein source and replace with turkey sausage, chicken, pork etc.
Made this today, and it was delicious. Used a can of rotel tomatoes with green chilis instead of salsa, again, delicious.
