While the spaghetti squash is cooking in the oven, in a large skillet, lightly spray with olive oil. Add chopped onion and mushrooms and cook for a few minutes. Push the vegetables to the edge of the skillet. Place the ground turkey, beef or vegan option in the middle of the pan and cook until no longer pink. Add the minced garlic and cook for another minute.
Add oregano and sauce and heat through.
After the squash is cool enough to handle, scrape the squash into a pie plate and up the sides. Spread cottage cheese over the bottom of the squash crust. Spread meat mixture over the cottage cheese. Sprinkle with mozzarella cheese.
Bake at 350 for 20-25 minutes.
