Wash and fork the potato and microwave for 4-5 minutes, depending on size. Allow to cool and cut into cubes.
Lightly spray a skillet with olive oil. Add the red onion and saute for 3-4 minutes. Add the minced garlic and saute an additional minute. Add the cubed potatoes and season with salt, pepper and rosemary and mix well.
Add the balsamic vinegar and saute an additional minute. Remove from heat and cool for a few minutes. Add the mozzarella cheese. Add your protein of choice and enjoy!
